- 1.5 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/4 cup bourbon
- 1/4 cup soy sauce
- 1/4 cup packed brown sugar
- 2 tablespoons honey
- 2 tablespoons ketchup
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- 1/2 teaspoon ground ginger
- Salt and freshly ground black pepper to taste
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a medium bowl, whisk together bourbon, soy sauce, brown sugar, honey, ketchup, Dijon mustard, minced garlic, and ground ginger.
- Reserve about 1/4 cup of the marinade for basting. Pour the remaining marinade into a resealable bag or bowl and add the chicken pieces.
- Marinate the chicken for at least 30 minutes, or up to 4 hours in the refrigerator.
- Preheat your grill to medium-high heat.
- Thread the marinated chicken pieces onto the prepared skewers.
- Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and lightly charred.
- During the last few minutes of grilling, brush the skewers with the reserved bourbon glaze.
- Remove from grill, season with salt and pepper if desired, and serve immediately.

- Ensure chicken is cooked to an internal temperature of 165°F (74°C).
- Adjust sweetness and bourbon flavor by modifying the brown sugar and bourbon quantities in the glaze.
