- 2 cups granulated sugar
- 1 cup packed light brown sugar
- 1 cup heavy cream
- 1/2 cup unsalted butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups pecan halves
Instructions
- Butter a baking sheet or line it with parchment paper.
- In a large saucepan, combine granulated sugar, brown sugar, heavy cream, and butter.
- Cook over medium heat, stirring constantly, until the butter is melted and the sugar is dissolved.
- Bring the mixture to a boil, then reduce heat to medium-low.
- Continue to cook, stirring occasionally, until the mixture reaches 240°F (116°C) on a candy thermometer.
- Remove from heat. Stir in vanilla extract, salt, and pecan halves.
- Working quickly, drop spoonfuls of the mixture onto the prepared baking sheet.
- Let the pralines cool completely before serving.
Notes
- Ensure your candy thermometer is accurate.
- Do not overcook the praline mixture, or it may become hard.
- If you don’t have a candy thermometer, you can test the mixture by dropping a small amount into cold water; it should form a soft ball.
