Ingredients

- 1.5 lbs salmon fillets
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the salmon fillets dry and season with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear salmon for 2-3 minutes per side until golden brown. Remove salmon from skillet and set aside.
- Add minced garlic and chopped sun-dried tomatoes to the skillet. Cook for 1 minute until fragrant.
- Pour in heavy cream and bring to a simmer.
- Stir in Parmesan cheese until melted and the sauce thickens slightly.
- Return salmon to the skillet, nesting it into the sauce.
- Bake for 8-10 minutes, or until salmon is cooked through and the sauce is bubbly.
- Garnish with fresh parsley before serving.
Notes
- For a less rich sauce, you can use half-and-half instead of heavy cream.
- Add a squeeze of lemon juice to the sauce for a brighter flavor.
- Serve with pasta, rice, or crusty bread to soak up the delicious sauce.
