Ingredients

  • 1.5 lbs salmon fillets
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the salmon fillets dry and season with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat.
  4. Sear salmon for 2-3 minutes per side until golden brown. Remove salmon from skillet and set aside.
  5. Add minced garlic and chopped sun-dried tomatoes to the skillet. Cook for 1 minute until fragrant.
  6. Pour in heavy cream and bring to a simmer.
  7. Stir in Parmesan cheese until melted and the sauce thickens slightly.
  8. Return salmon to the skillet, nesting it into the sauce.
  9. Bake for 8-10 minutes, or until salmon is cooked through and the sauce is bubbly.
  10. Garnish with fresh parsley before serving.

Notes

  • For a less rich sauce, you can use half-and-half instead of heavy cream.
  • Add a squeeze of lemon juice to the sauce for a brighter flavor.
  • Serve with pasta, rice, or crusty bread to soak up the delicious sauce.
