Ingredients

  • 1 1/2 cups granulated sugar
  • 3/4 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 2 cups grated zucchini (about 2 medium zucchinis)
  • 1/2 cup chopped walnuts or pecans (optional)
  • For the Glaze (optional): 1 cup powdered sugar, 2-3 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a separate bowl, beat the eggs and sugar until light and fluffy.
  4. Gradually beat in the vegetable oil, milk, and vanilla extract until well combined.
  5. Stir in the lemon zest and lemon juice.
  6. Add the grated zucchini and chopped nuts (if using) to the wet ingredients. Mix until just combined.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  11. If making the glaze, whisk together powdered sugar and lemon juice until smooth. Drizzle over the cooled bread.
