  • Total Time: 1 hour 50 minutes
  • Yield: 1 loaf 1x

Ingredients

Scale
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 teaspoon sugar
  • 1 cup warm water (105-115°F)
  • 3 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 2 tablespoons olive oil, plus more for greasing
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh Italian herbs (such as oregano, basil, rosemary)
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon melted butter
  • 1 teaspoon garlic powder

Instructions

  • In a small bowl, dissolve yeast and sugar in warm water. Let stand for 5-10 minutes until foamy.
  • In a large bowl, combine flour and salt. Make a well in the center.
  • Pour the yeast mixture and olive oil into the well. Mix until a shaggy dough forms.
  • Turn dough out onto a lightly floured surface. Knead for 5-7 minutes until smooth and elastic.
  • Place dough in a greased bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.
  • Punch down dough. Gently knead in Parmesan cheese and chopped herbs.
  • Shape dough into a round loaf or place in a greased loaf pan.
  • Cover and let rise for another 30 minutes.
  • Preheat oven to 375°F (190°C).
  • Brush the top of the loaf with melted butter. Sprinkle with mozzarella cheese and garlic powder.
  • Bake for 25-30 minutes, or until golden brown and cooked through.
  • Let cool slightly before slicing and serving.

Notes

  • For a pull-apart bread, shape the dough into rolls and arrange them in a greased baking pan before the second rise.
  • Feel free to add other cheeses like provolone or cheddar.
  • Fresh herbs will provide a more vibrant flavor.
