  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potatoes with olive oil, rosemary, thyme, salt, and pepper. Spread them in a single layer on a baking sheet.
  3. Roast the potatoes for 20 minutes.
  4. While the potatoes roast, pat the beef cubes dry with paper towels and season them with salt and pepper.
  5. In a large skillet, melt the butter over medium-high heat. Add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
  6. Add the seasoned beef cubes to the skillet and sear them on all sides until browned, about 2-3 minutes per side.
  7. Once the potatoes have roasted for 20 minutes, add the seared beef and the garlic butter from the skillet to the baking sheet with the potatoes. Toss everything together to coat.
  8. Return the baking sheet to the oven and bake for another 10-15 minutes, or until the beef is cooked to your desired doneness and the potatoes are tender and golden brown.
  9. Garnish with fresh parsley before serving.
