Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a mini muffin tin.
  2. Unroll the pie crusts. Use a 2-inch round cookie cutter to cut out circles.
  3. Press the circles into the prepared mini muffin tin cups.
  4. In a medium bowl, combine chopped pecans, brown sugar, melted butter, egg, vanilla extract, and salt. Mix well.
  5. Spoon the pecan mixture evenly into the pie crusts in the muffin tin.
  6. Bake for 15-20 minutes, or until the crust is golden brown and the filling is set.
