- 1 package (14.1 ounces) refrigerated pie crusts
- 1 cup chopped pecans
- 1/2 cup packed light brown sugar
- 1/4 cup butter, melted
- 1 large egg
- 1 teaspoon vanilla extract

Instructions
- Preheat oven to 350°F (175°C). Lightly grease a mini muffin tin.
- Unroll the pie crusts. Use a 2-inch round cookie cutter to cut out circles.
- Press the circles into the prepared mini muffin tin cups.
- In a medium bowl, combine chopped pecans, brown sugar, melted butter, egg, vanilla extract, and salt. Mix well.
- Spoon the pecan mixture evenly into the pie crusts in the muffin tin.
- Bake for 15-20 minutes, or until the crust is golden brown and the filling is set.
- Let the bites cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a richer flavor, you can use dark brown sugar.
- Add a pinch of cinnamon or nutmeg to the filling for extra spice.
- These bites can be stored in an airtight container at room temperature for up to 3 days.
