Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  3. In a medium bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, ginger, garlic, and chicken broth until smooth.
  4. Pour the peanut butter sauce into the skillet and bring to a simmer over medium heat, stirring constantly.
  5. Return the cooked chicken to the skillet and toss to coat with the sauce. Cook for another 2-3 minutes, or until the sauce has thickened slightly and the chicken is heated through.
