- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- Salt and pepper to taste
- Optional garnishes: chopped peanuts, sliced green onions, sesame seeds
Instructions
- Season chicken pieces with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
- In a medium bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, ginger, garlic, and chicken broth until smooth.
- Pour the peanut butter sauce into the skillet and bring to a simmer over medium heat, stirring constantly.
- Return the cooked chicken to the skillet and toss to coat with the sauce. Cook for another 2-3 minutes, or until the sauce has thickened slightly and the chicken is heated through.
- Serve hot, garnished with chopped peanuts, green onions, and sesame seeds if desired.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the sauce.
- You can substitute chicken thighs for chicken breasts.
- Serve over rice or noodles for a complete meal.
