- 2 medium apples, peeled, cored, and diced

Instructions
- In a large bowl, whisk together flour, baking powder, salt, cinnamon, and sugar.
- In a separate bowl, whisk together egg, milk, melted butter, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Gently fold in the diced apples.
- Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
- Drop spoonfuls of batter into the hot oil, being careful not to overcrowd the fryer.
- Fry for 2-3 minutes per side, or until golden brown and cooked through.
- Remove fritters from the oil and place them on a wire rack to drain.
- Dust with powdered sugar and serve warm.
Notes
- For extra flavor, add a pinch of nutmeg or cardamom to the batter.
- If you don’t have a deep fryer, you can use a large pot with high sides.
- Make sure the oil is hot enough before adding the batter, or the fritters will be greasy.
- Serve with a simple glaze made from powdered sugar and milk for added sweetness.
