- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 2 cups peeled and diced apples
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, combine granulated sugar, brown sugar, oil, eggs, and vanilla extract. Beat until well combined.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
- Fold in the diced apples and nuts (if using).
- Pour batter into the prepared loaf pan and bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For a streusel topping, combine 1/2 cup flour, 1/4 cup brown sugar, 1/4 cup butter, and 1/2 teaspoon cinnamon. Sprinkle over the batter before baking.
- Store leftover bread in an airtight container at room temperature for up to 3 days.
- You can substitute applesauce for some of the oil for a lower-fat version.
