  • 2 teaspoons baking powder

  • 1/4 teaspoon ground cloves
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup apple cider, reduced to 1/4 cup
  • 1/2 cup unsweetened applesauce
  • 2 teaspoons vanilla extract
  • Vegetable oil, for frying
  • Cinnamon sugar, for coating

Instructions

  1. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  2. In a separate bowl, cream together granulated sugar, brown sugar, and butter until light and fluffy. Beat in eggs one at a time, then stir in reduced apple cider, applesauce, and vanilla extract.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  4. Cover the dough and chill for at least 1 hour.
  5. In a large pot or Dutch oven, heat 2-3 inches of vegetable oil to 350°F (175°C).
  6. Roll out the dough to about 1/2 inch thickness on a lightly floured surface. Use a donut cutter to cut out donuts.
  7. Carefully drop donuts into the hot oil, a few at a time. Fry for 2-3 minutes per side, or until golden brown.
  8. Remove donuts with a slotted spoon and place on a wire rack to drain.
  9. While still warm, toss donuts in cinnamon sugar to coat.
  10. Serve immediately and enjoy!

  • For best results, use a candy thermometer to maintain the oil temperature.
  • Don’t overcrowd the pot when frying the donuts.
