- 4 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup apple cider, reduced to 1/4 cup
- 1/2 cup unsweetened applesauce
- 2 teaspoons vanilla extract
- Vegetable oil, for frying
- Cinnamon sugar, for coating
Instructions
- In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a separate bowl, cream together granulated sugar, brown sugar, and butter until light and fluffy. Beat in eggs one at a time, then stir in reduced apple cider, applesauce, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Cover the dough and chill for at least 1 hour.
- In a large pot or Dutch oven, heat 2-3 inches of vegetable oil to 350°F (175°C).
- Roll out the dough to about 1/2 inch thickness on a lightly floured surface. Use a donut cutter to cut out donuts.
- Carefully drop donuts into the hot oil, a few at a time. Fry for 2-3 minutes per side, or until golden brown.
- Remove donuts with a slotted spoon and place on a wire rack to drain.
- While still warm, toss donuts in cinnamon sugar to coat.
- Serve immediately and enjoy!
Notes
- For best results, use a candy thermometer to maintain the oil temperature.
- Don’t overcrowd the pot when frying the donuts.
- You can substitute apple pie spice for the cinnamon, nutmeg, and cloves.
