- 1/4 cup fresh lime juice

- 2 cloves garlic, minced

- 1 tablespoon honey or maple syrup
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional for heat)

Instructions
- Marinate the chicken by coating it with half of the coconut-lime mixture and refrigerate for at least 15 minutes.
- Prepare the coconut lime sauce by whisking together the remaining coconut milk, lime juice, soy sauce, garlic, ginger, honey, salt, black pepper, and red pepper flakes.
- Preheat the oven to 400°F (200°C) and place the marinated chicken in a large oven-safe skillet. Pour the coconut-lime sauce over the chicken.
- Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
- Add vegetables during the last 10 minutes of baking if desired.
- Let the chicken rest for a few minutes, then garnish with cilantro and serve with lime wedges.
