One-Pan Coconut Lime Chicken is a delicious and easy meal that combines tender chicken breasts with a creamy coconut-lime sauce, perfect for busy weeknights or special occasions.

  • 4 boneless, skinless chicken breasts
  • 1 can (13.5 oz) coconut milk
  • 1/4 cup fresh lime juice
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional for heat)
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Marinate the chicken by coating it with half of the coconut-lime mixture and refrigerate for at least 15 minutes.
  2. Prepare the coconut lime sauce by whisking together the remaining coconut milk, lime juice, soy sauce, garlic, ginger, honey, salt, black pepper, and red pepper flakes.
  3. Preheat the oven to 400°F (200°C) and place the marinated chicken in a large oven-safe skillet. Pour the coconut-lime sauce over the chicken.
  4. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  5. Add vegetables during the last 10 minutes of baking if desired.
  6. Let the chicken rest for a few minutes, then garnish with cilantro and serve with lime wedges.
